Easy menu for busy working but sometimes lazy lady like me (Menu 02:Squash with long beans & Okra in Coconut Milk)

Another quick recipe that I would like to share you guys, we ate a lot of beef for the past days so my hubby and I would like to have a pure vegetable for tonight and here it is….

Menu # 2 – Squash with long beans & Okra in Coconut Milk

Ingredients:

Onions
Long beans
Okra
Squash
Coconut Milk
Shrimp paste
Chili
Salt & pepper to taste

My simple methodology:

  1. Boil the squash along with the onion in half cup of water for about 4 minutes
  2. I prefer the squashed to be overcooked so the sauce would be tastier, so I waited for another 2 minutes
  3. Add the shrimp paste and coconut milk let it boil for 4 minutes, keep on checking and stirring
  4. Add the long beans, chili & okra cook it for another 2-3 minutes
  5. Add salt & pepper to taste
  6. Serve with hot steam rice & enjoy
